These Courgette Brownies are super moist, delicious & tasty. Naturally sweetened with our Monk Fruit extract

Method

Step 1

Pre-heat oven to 180 degrees and prepare baking tray with baking parchment paper.

Step 2

In a bowl, add the courgettes and mix with the salt.

Step 3

Add the Chia seeds and 6tbsp of water to create a gooey mixture, leave to soak together.

Step 4

Place a glass bowl over a pan full of simmering water. To the glass bowl, add the chocolate, oil and cacao butter.

Step 5

In a large bowl, sieve the flour, bicarbonate of soda and Lo Han Guo. Fold in the chocolate and courgettes. Mix in the vanilla essence.

Step 6

Pop into a prepared tin and then put into the oven for about 20-25 minutes. There should be a slight crust around the edges and soft in the middle.

Step 7

Leave to cool, then take out of the tray and cut into squares.

  • 2 tsp vanilla Essence
  • 270g Courgettes (Grated)
  • 1 tsp salt
  • 2 tbsp Chia Seeds
  • 200g Dark Chocolate
  • 1tbsp Coconut Oil
  • 30g Cacao Butter
  • 180g Plain Flour
  • 30g Almond flour
  • 1 tsp bicarbonate of soda
  • ½ tsp Lo Han Guo
