Method

Step 1

Pre-heat fan oven to 180 degrees

Step 2

Mix all of the dry ingredients in a bowl.⠀

Step 3

Combine all the wet ingredients together⠀

Step 4

Gradually add the wet ingredients into the dry⠀

Step 5

Spoon a teaspoon of the mixture into muffin cases⠀

Step 6

Pop into the oven and cook for 20-25 minutes or until golden brown

Ingredients

• 70g coconut flour⠀
• 30g almond flour⠀
• 1/4 tsp lo han guo⠀
• 1 1/2 scoop all natural whey⠀
• 1/4 tsp baking powder⠀
• 2 eggs, whisked ⠀
• 110g butter, melted (or coconut oil)⠀
• 1 tsp vanilla essence⠀
• 100 ml milk of choice⠀
