Chocolatley, sweet, creamy overnight chia pudding

Method

Step 1

In a small mixing bowl, sift in the cocoa powder. Then add the lo han guo, ground cinnamon, and salt. Mix altogether.

Step 2

Add the vanilla essence. Whisk together. Gradually add the milk and whisk to form a paste. Add the remaining milk and whisk until smooth.

Step 3

Pour in the chia seeds. Whisk the mixture until well combined. Cover with cling film and refrigerate for 4-5 hours or overnight. Whisk every now and then. It should be a pudding like consistency.

Step 4

Serve with desired toppings such as fresh fruit, coconut cream, greek yoghurt etc. Leftovers can be enjoyed for up to 3-5 days.

• 5-7 scoops lo han guo
• 1/2 tsp ground cinnamon
• 1 pinch sea salt
• 1/2 tsp vanilla extract⠀
• 300ml milk of choice⠀
• 6 tbsp chia seeds
