Super easy, only 3 ingredients, homemade fruity jam. Chia seeds are a great source of Omega-3’s. Add a dollop on your porridge, spread on toast or drizzle. over pancakes. Pop in an airtight container or mason jar with lid, store in the fridge to keep for a few weeks. For a bigger batch, just double the ingredients.

Method

Step 1

In a medium saucepan, heat the strawberries over a medium heat.

Step 2

Once the strawberries begin to soften, take of the heat and mash with a potato masher. Then add the scoops of lo han guo and stir well.

Step 3

Pop the saucepan back onto the heat. Allow to gradually come to a slow boil. Make sure to stir continuously.

Step 4

Once bigger bubbles have began to form, add the chia seeds. Continue to heat over a low heat for about 15 minutes until the jam mixture becomes like a gelatine mixture.

Step 5

If you prefer to have a smoother jam consistency, pop the mixture into a blender. If however you prefer a few natural, strawberry chunks, pour into a mason jar (or container), allow to cool. Leave in the fridge to achieve the perfect texture. With an airtight lid & stored in the frisge, the jam will be fine for a couple of weeks.

• 1 1/2 tbsp chia seeds
